Good day for baking

Its a drizzly, cold Saturday, but nice to get some rain and be in the cosyness of our home with the wood fire going.

I decided to do some baking...zucchini slice and banana muffins.

I did a double batch of the slice as I'll freeze it and take some portions down to Adelaide next week for Pauls Mum and Dad. They might even get some muffins!

Now I have the dishes awaiting me!

My scarfe collection keeps growing...I never used to wear scarfes but the past 2 years I've come to really like them and there is such a variety in the shops now. Here's a peak at the main ones I wear...I have others that hide in my drawer!
On Pinterest I came across an interesting crotcheting stitch that looks like it has been knitted.
The tutorial for it is here. I might get out my crotchet hook one day and give it a go.

Time to go make a coffee and try one of the muffins!

June!

Seems that I'm only managing a post a month these days! I have had good intentions of doing a post the past couple of weekends but never got there....oh well I'm here now for anyone interested in reading!!

In my last post I showed a photo of a cowl I had just started knitting, it was really quick and easy to make and finished it in a couple of weeks. Here is a 'selfie' of me with it on.

I've just started another one for someone's birthday.

Last year we had to move Mum and Dad out of their unit and into a nursing home. At the time we distributed their furniture to family members or the opp shops but a lot of their personal belongings got boxed up and distributed to us girls to sort out at a later date. Well that 'later date' came a couple of weekends ago. We met at one of my sisters places and got everything out of the boxes and sorted things. My sisters shed looked like a garage sale.
As Mum was an avid sewer in her hey day, there were lots of boxes of her sewing/craft gear. I took most of them home with me and have enjoyed going through them.
She had a few knitting needle containers and for storage of some of them she used a tennis ball container...how clever!
Mum was a great no fuss cook too and we divided her many well used recipe books between us as we didn't want to loose all those good recipes. This was one that was well loved!
Every Monday night the kids come for tea and I quite often try new recipes. Last week I tried a recipe from someone on facebook, Crispy Cheddar Chicken...it was good!
Here is the recipe as I couldn't create a link for it.

Crispy Cheddar Chicken

2 lbs chicken tenders or 4 large chicken breasts
2 sleeves Ritz crackers
1/4 teaspoons salt
1/8 teaspoon pepper
1/2 cup whole milk
3 cups cheddar cheese, grated
1 teaspoon dried parsley

Sauce:

1 10 ounce can cream of chicken soup
2 tablespoon sour cream
2 tablespoon butter

Crush crackers. If using chicken breasts and not tenders, cut each chicken breast into 3 large pieces. Pour the milk, cheese and cracker crumbs into 3 separate small pans. Toss the salt and pepper into the cracker crumbs and stir the mixture around to combine. Dip each piece of chicken into the milk and then the cheese. Press the cheese into the chicken with your fingers. Then press the cheesy coated chicken into the cracker crumbs and press it in.

Spray a 9×13 pan with cooking spray and lay the chicken inside the pan. Sprinkle the dried parsley over the chicken. Cover the pan with tin foil and bake at 400 degrees for 35 minutes. Remove the tin foil, bake for an additional 10-15 minutes, or until the edges of the chicken are golden brown and crispy.

In a medium sized sauce pan combine the cream of chicken soup, sour cream and butter with a whisk. Stir it over medium high heat until the sauce is nice and hot. Serve over the chicken.


Adrian and Chelseas house is coming along well. The gyprocking and cornicing is now in place. Probably about a month off of moving in. The first photo is looking from the front door in and the second is looking back from the bifold doors to the kitchen area.
Here is a photo of my dear Mum that my sister sent through today when she visited her. She has lunch in her room on Saturdays and boy what a meal it is....they feed them well!

Oops, Mum has turned sideways...not sure why...haha!

Have been to our local coffee shop a few times with various friends over the past weeks and always enjoy a delicious coffee and treat.
